Have you ever had something in a restaurant and thought that you just HAD to learn the recipe? Well this was the case of this dish for me! Ever since I tried it (whilst working as a waitress at the restaurant in question) I have always wanted to make it for myself at home – so why not share this delicious recipe with you, so you too can enjoy this simple vegetarian concoction.
Cut the pumpkin into rounds, thickness to your liking – you can create more layers if you cut the pumpkin thinner. Place in a baking dish and drizzle with olive oil and mixed dried herbs. Roast in the oven until tender for about 15 minutes, depending on how thick the slices of pumpkin are.
To be sautéed with a bit of salt and olive oil
- Goats Cheese
This can be placed in thin rounds on each layer, or one large piece on top of the tower. For best results, place goats cheese in the oven or on the grill to obtain a rich creaminess.
- Poached Egg
Need I say more… If you’re one of those people who enjoy breaking the egg and watching the yolk run down, then this is the option for you! Just poach the egg for 2-3 minutes and place on top of the tower.
- Use Truffle Oil and Green Pesto to garnish the plate and add extra flavour to the dish.
